85 BATCHED COCKTAILS BATCHED 1a Batching cocktails increases back of house prep in order to lower bill times by easing execution and improve quality through consistency. Our batching philosophy is adopted from a world-renowned bar in San Francisco Trick Dog. We simply mix every shelf stable ingredient ahead of time, and add the fresh ingredients to the batched bases. This reduces all drinks to one or two ingredients. To be batched, a cocktail must include a minimum of three shelf stable ingredients to improve efficiency. This excludes drinks including the Moscow Mule, Mojitos and Marilyn Monroe. BATCHING 1. Batch each cocktail following the recipe in a Cambro container. Select the appropriate container according to the Earls recipe. Ensure your container is clean and free of any imperfections. 2. Transfer each batch into the Bottle Filling containers with a funnel. We always batch in a separate container, and add to the Bottle Filling container, this eliminates the possibility of making a mistake in the entire batch. 3. The Bottle Filling containers were chosen as they have slim pour spouts to fill bottles and they are easy to read. DO NOT use the 22 qt cambros with a pour spout, as they are round they do not seal well and leak easily. 4. Hard label and organize the Bottle Filling containers in the bar cooler
