6 BUILDING A COCKTAIL BARTENDING TECHNIQUES 1 A built cocktail is simply a mixed drink that is made in the same glass that it is served in. 1. Select the appropriate glassware according to the Earls recipe. Ensure your glassware is clean and free of any imperfections. 2. Pack the glass full with ice or according to recipe specifications. 3. Measure ingredients into the glass in order of thickness – thickest to thinnest liquid. Always measure with an approved stainless steel jigger. 4. Top cocktail with appropriate mixer as specified in the recipe. 5. Using a bar spoon mix the cocktail to incorporate the ingredients if necessary. 6. Garnish appropriately according to the recipe. 7. Cocktails are always served on a white cocktail napkin unless coasters have been produced specifically for a cocktail promotion.
