45 CUCUMBER PIECES INGREDIENTS 3 ❖ CCP: Wash Hands & (Wear Gloves where required) 1. Only cut enough product as per prep chart and current usage 2. Slice cucumber in half lengthwise 3. Flip flesh side down 4. Cut in half lengthwise 5. Cut strips into ¼ ” pieces 6. Cucumber pieces should be no more than ¼ ” pieces. 7. Divide in 0.5 oz portion bags. NOTE: Never leave syrups, purees or garnish fruit unrefrigerated. Exposure to the open air, even for short periods of time compromises the Fresh quality of these products .
